Vin Santo del Chianti Classico "secco"
This variety of Vin Santo is obtained from Trebbiano
and Malvasia grapes.
The grapes are dried for about four months ( from September
until December ) , a shorter period than the one required for the Vin
Santo amabile. Then the wine is aged in kegs made of French oak for at
least five years.
It is the wood we use that gives the dry taste to this
wine.
Its bouquet recall that of malt and bread crust. This
Vin Santo can be drunk as a dessert wine or as an aperitiv wine, with
some types of cheese, like Gorgonzola, Stilton or Roquefort.
It is suited to connoiseurs. Those who like Sherry will
love it.
